If you like a bit of sweet, tart and freshness combined all-in-one over your favorite breakfast or desserts then a fruit compote is the way to go. They are perfect of pancakes, waffles and french toast, as well as desserts like ice cream or cakes. My compote recipe is very basic which to me is ideal because I can make it without much hassle. Not mention I use frozen fruit! It’s perfect to use when certain fruits are not in season or you simply do not have 3-4 different types of berries laying around on a given day! However, you can make a compote with different fruit combinations and if you have fresh fruit available you can still use this recipe without much difference.

Happy 4th of July!! Here is a little and simple cupcake recipe. It’s nothing fancy and its super cute for a Independence day get together…or any get together. Personally I enjoy cake mix boxes, it’s easy and fast to make and most of the times I can’t taste the difference between homemade and cake mix boxes. The cream cheese frosting is actually my favorite frosting to make because it is absolutely delicious and the berry compote is awesome to have around as a topping for basically anything. Seriously try this recipe for a summer day!
I will have individual posts for cream cheese frosting and berry compote.

Over a week ago I bought a small box of blackberries thinking the kids would devour them…boy was I wrong. Almost everyday I offered the berries and they were rejected each time. I really didn’t want it to go bad so I figured I would use it in a recipe and by making a jam out of it I would be able to preserve it better and have more options on how we eat it! Making jam is surprisingly very easy and so delicious, a simple way to learn is to remember to use equal parts berries and sugar!
