When I think of comfort food fried chicken is at the top of my list. I LOVE fried chicken! It’s in my top 5 comfort favorites…probably in my top 3. This is a version of how my mom made it for us growing up with a bit of my own flavor. I won’t lie, frying chicken can still be a bit intimidating for me that’s why I like to finish it in the oven. It’s a great method for beginners or if your pieces of poultry vary in size and you have to make extra sure that you’re not going to feed anyone uncooked poultry! I like this recipe because it has ingredients that are most likely in your fridge and pantry already and it’s perfect for a weeknight dinner!

When it comes to appetizers you can never go wrong with tacos…truthfully you can never go wrong with TACOS period. These mini crispy tacos are perfect for any gathering and it pairs great with a variety of sauces/salsas and little extras like fresh limes. There’s really just two ingredients for this recipe…oh and a dash of salt. The first is the tortilla, for the bite size taco get yourself a package of “street corn tortillas”, if you don’t have that option you can always use a medium to large cookie cutter to get the right size. You can always just use regular sized corn tortillas, the bigger the better right? The second ingredient is the chicken. I absolutely love store bought rotisserie chicken. Rotisserie chicken is the best because I can get a good two meals for 4 from one chicken, they are so juicy and bursting with flavor and I can’t forget the perfectly golden savory skin. Yum! So because it’s convenient and flavorful, I choose to use rotisserie chicken, but if you can and want to make your own, more power to you! Alright..lets begin.

When it comes to food, there is one way to win my husband over…practically anything with a sauce! I want to share a delicious and succulent dish. Crispy chicken smothered in a smooth sweet and tangy sauce..yum! 11 ingredients may seem like a lot, but honestly when you’re making it you hardly notice it and the sauce alone is everything you need in life. It’s absolutely the best!

You know what’s good? Chicken Tortilla Soup. You know what’s better? Making it in a crockpot! Yes, it takes longer than just making it on the stove top, but if you are already having a long day and crock pots are your best friend when it comes to having home cooked meals, then this is a perfect and simple recipe for you. This recipe is so simple, you can consider it being a one of those recipes where you can just dump it and forget it. I’ve seen and tasted plenty of chicken tortilla soups that have extra ingredients like black beans…personally I’m not a fan. Tomatoes, chilies and corn are plenty enough. But feel free to add any extra veggies! I’m sure it will come out as delicious either way!
